Position:  Cost Controller

EXPECTED RESPONSIBILITIES:

∙ To supervise the quarterly food and beverage inventories with the F&B Department fulfills the segregation of duty function for the Finance department during the inventory taking.
∙ To provide micros sales reports in an Excel format as per request of FC.
∙ To update the recipes for each menu item for F&B and to provide a monthly menu engineering report for all outlets.
∙ To calculate standard theoretical food costs based on the sales history and the standard recipes and compare them with actual results.
∙ To prepare monthly food and beverage cost reports and departmental consumption for inventory Items.
∙ To prepare overall cost comparison between the local competitors.
∙ To prepare P&L statements for special events and promotions.
∙ To provide a productivity report outlet by outlet.
∙ To provide the monthly Breakage and Lost Equipment Report of the Stewarding operations equipment.
∙ To assist defining standardized beverage portions and calculate their potential ratio for mixed beverages.
∙ To participate in the Monthly F&B meeting, represent the Finance department and to report the outcomes of these meetings and any of other meetings as instructed by its superior.
∙ To spot check store invoices and make sure that invoices are posted to correct stores and articles.
∙ To supervise F&B interdepartmental transfers with the F&B department, to fulfill the segregation of duty function for the Accounting & Finance department during the transfers update.
∙ To implement & update new sales items and/or item sales prices in the POS system.
∙ To handle administrative work that is related to his assignment.
∙ To assist to prepare budgets and strategic plans for the F&B Department.
∙ To provide a positive attitude to all members of staff.
∙ To perform other duties assigned by his/her supervisor.
∙ Report Officers checks, Entertainment checks, VOID checks
∙ Control MC postings on daily basis, check them against the invoices and delivery notes
∙ Assist departments on pricing and market surveys
∙ To maintain, supervise analyze and submit the relevant inventories(incl. but not limited to par stock)
∙ Periodically control that received items are on place
∙ Prepare daily F&B cost reports
∙ Check the accuracy of banquet billing
∙ To follow up and prepare posted internal transfers, food to beverage and beverage to food.
∙ Reconcile all inventory movements
∙ To check minimum on monthly basis expiry date of stock items, report them and follow up
∙ All additional Reports and Tasks as per request of Finance Controller.

EXPECTED QUALIFICATIONS:

• Bachelor’s degree / higher education qualification /
• Technology Experience with MS Excel and mF Material Controls,
• Fluent in English/Russian/Azeri
• Minimum 3 years’ experience in this field
• Hotel experience preferable
