Job Summary:
Accountable for the quality, consistency and production of all culinary outlets. Exhibits culinary talents by personally performing tasks while leading the staff and managing all food related functions. Coordinates menus, purchasing, staffing and food preparation for the property's restaurants. Works with team to improve guest and employee satisfaction while maintaining the operating budget. Must ensure sanitation and food standards are achieved. Develops and trains th
e team to improve results.
Job Description:
• Determine how food should be presented, and create decorative food displays;
• Determine production schedules and staff requirements necessary to ensure timely delivery of services;
• Estimate amounts and costs of required supplies, such as food and ingredients;
• Inspect supplies, equipment, and work areas to ensure conformance to established standards;
• Instruct cooks and other workers in the preparation, cooking, garnishing, and presentation of food;
• Monitor sanitation practices to ensure that employees follow standards and regulations;
• Order or requisition food and other supplies needed to ensure efficient operation;
• Analyze recipes to assign prices to menu items, based on food, labor, and overhead costs;
• Check the quantity and quality of received products;
• Collaborate with other personnel to plan and develop recipes and menus, taking into account such factors as seasonal availability of ingredients and the likely number of customers
Requirements:
• Culinary Art School/College education
• Work experience min. 3 years (5* hotel and/or restaurants)
• Professional in European and Mediterranean cuisine
• Strong personality, people management skills, stress management, ability to work under pressure
• Deep knowledge of international standards of hygiene, storage (certificates will be advantage)
