The role will continually develop and enhance the restaurants operation.  To be creative and innovative in all aspects of the restaurant operations, ensuring achievement of the restaurant brand manual and budgets in line with company policies and prevailing legislation.

General Summary of Duties:

Assist guests with wine, sake, and champagne selection, considering their taste and budget when guiding them through the menu
Be fully able to explain how our wines, sake, or champagne compliments the items on our food and dessert menu  
Ensure that all wine, sake, and champagnes is presented and served correctly and that all pouring techniques are adhered to as specified by Hakkasan standards        

Job Requirements  (includes but is not limited to the following):

1. Liaise with the Wine Manager and Duty Manager throughout service to ensure that guests' needs are understood and fulfilled
2. Explain alternative wine, sake, or champagne selections to guests should their choice be unavailable
3. Ensure that the sommelier team assists with food service when required
4. Follow up with guests to ensure their satisfaction, to re-pour, and to potentially sell additional items as often as possible
5. Ensure all wine, sake, and champagne is entered into the POS system before being served
6. Assist waiters in clearing the tables on the way back from running wines or food to tables or whenever a waiter requests it
7. Ensure all the wine is served according to the Hakkasan specifications, always using position numbers so that the guest is not disturbed unnecessarily
8. Follow the order of service (see Hakkasan Order of Service Guidelines issued during training)
9.     Perform other related duties as assigned.   Performance Requirements (knowledge, skills and abilities):   Familiarity with food service concepts, practices, and procedures. Effective supervisory and communication skills. Well organized and demonstrated strong problem solving skills. Ability to perform basic/intermediate math skills. Ability to operate office equipment (i.e., computer, 10-key, copier, fax, and telephone). Ability to read, write, and understand English. Knowledge, understanding, and compliance of policies and procedures, job descriptions, daily memorandums, chemical labels, and other instructions. 
10. Excellent English and any other language would be an advantage
11. Passion for delivering exceptional levels of guest service     

Education:

   High school education or equivalent.
   Further Education (plus)
   Certification from accredited wine institution, such as Court of Master Sommeliers required.     

Experience:

•    Minimum of three years relevant food & beverage management experience in a high quality, high volume establishments and 5* Hotels.
