Position: Assistant Outlet Manager for Intourist Hotel

About the Role:

Assist the Outlet Manager to manage all aspects of a specific outlet(s) within the F&B department including the selection, development and performance management of colleagues, optimizing profits and increasing sales.

Main Duties:

• Monitor effectiveness of workflow & sequence of service during service periods and provides hands on support as and when required;
• Monitor customer satisfaction and respond to customer feedback and complaints ensuring Intourist procedures for Complaint handling are followed;
• Maintain & actively use a database of customer details / history and other strategies that assist in guest recognition;
• Advise the Outlet Manager of any improvements needed in relation to restaurants operation including updates to SOPs or addition / deletion of SOPs;
• Conduct performance evaluation of colleagues, training of colleagues, guidance, coaching and counselling of colleagues;
• Assist in ensuring that colleagues are aware of the relevance and importance of their activities and how they contribute to the department objectives detailed in the F&B Departmental Performance Plan;
• Assist in determining the necessary competence for colleagues and provide training or other actions to satisfy these needs;
• Provide constant coaching, counselling and discipline to colleagues to ensure their capability to meet the needs of the customer and the organization;
• Monitor manning and competence level of selected colleagues to ensure sufficiency for the department to meet the needs of the organization and customer;
• P&L analysis, Budgetary Reports to Telephone Test Call results, Customer Feedback;
• Assist in maintaining appropriate records of education, training, skills and experience;
• Contribute to the implementation the marketing activities and to achieve desired results;
• Attends & actively participates in the daily F&B briefings in the absence of the F&B Manager;
• Discuss with the outlet chef regarding menus, special requests etc.;
• Train all colleagues in suggestive selling and up-selling techniques to assist in achieving maximize profitability;
• Conduct regular briefings and meetings to ensure all colleagues receive the information necessary to perform their jobs;
• Develop and update F&B knowledge of all colleagues on a regular basis;
• Maintain a working knowledge of relevant sections within the Intourist Food Hygiene SOP and assist the Outlet Manager to ensure the Outlet meets these standards at all times;
• Assist the Outlet Manager to prepare budgets & forecasts when necessary;
• Maintain awareness of Outlet(s) financial performance;
• Make recommendations to the Outlet Manager for price and menu changes that will enhance profitability;
• Perform Micros format updates;
• Ensure that all furniture, equipment, utensils and silverware used in the outlet is accounted for, properly handled and serviced, and maintained to prevent excessive wear and tear;
• Attend & actively participate in daily & weekly Food and Beverage Briefings / meetings;
• Attend to any other tasks defined by the F&B or Senior Management.
