Scope

The incumbent in this position supervises all operational aspects of a specific outlet(s) within the F & B Department including the development and performance management of colleagues, optimizing profits and increasing sales. Supervises scheduled shifts ensuring guest satisfaction. Supervises all operational issues ensuring Hotels’s Standard Operating Procedures are met and value is added to the F & B objectives as detailed in the F & B Department Performance Plan. Resumes full responsibility of a specific shift in the absence of the Assistant Outlet Manager/Outlet Manager.

Duties
  
• To ensure that the Restaurant Outlet is clean, neat and tidy.
• To monitor effectiveness of workflow and sequence of service during service periods and provides constant hands-on support.
• To inform Assistant Outlet Manager/Outlet Manager of any complaints, negative feedback from guests and concerns about colleagues satisfaction or colleague performance.
• To actively use the database of customer details/history to assist in guest recognition.
• To advice the Assistant Outlet Manager/Outlet Manager of any improvement needed in relation to restaurants operation including updates to SOPs or addition/deletion of SOPs.
• To conduct performance evaluation of colleagues, training of colleagues, guidance, coaching and counseling of colleagues.
• To maintain a thorough working knowledge of F & B SOPs and ensure these are upheld at all times through constant observation and coaching.
• To assist Assistant Outlet Manager/Outlet Manager in the implementation of the marketing activities and to achieve desired results.
• To conduct the pre-service shift briefing in the absence of the Assistant Outlet Manager/Outlet Manager.
• To ensure opening and closing checklist are completed on a daily basis.
• To monitor and assist in the completion of cleaning schedules.
• To provide guests with quality service by monitoring staff assignments and responsiveness and seeking opportunities to communicate with guests to personalize the service.
• To utilize supervisory skills, effective communication, and motivational skills to maximize employee productivity and guest satisfaction.
• To conduct regular briefing and training sessions to ensure all colleagues receive the information necessary to perform their jobs.
• To assist the Assistant Outlet Manager/Outlet Manager to develop and update F & B knowledge of all colleagues on a regular basis.
• To maintain a working knowledge of relevant sections within the Hotel Hygiene SOP and assistAssistant Outlet Manager/Outlet Manager ensure the outlet meets these standards at all times.
• Demonstrates teamwork by cooperating and assisting co-workers as needed.
• To maintain awareness of outlet(s) financial performance.
• To utilize up-selling and suggestive selling techniques to enhance the outlets financial performance.
• To make recommendations to the Assistant Outlet Manager/Outlet Manager for price and menu changes that will enhance profitability.
• To assist in monitoring breakage of chinaware and glassware and the implementation of strategies to reduce where possible.
• Performs all duties and responsibilities in a timely and efficient manner in accordance with established company policies and procedures to achieve overall objectives of this position.
To understand and strictly adhere to the Rules & Regulations established in the Employees Handbook and the Hotel’s policy on Fire, Hygiene and Health & Safety.

JOB PROFILE: 
  
• EDUCATION : High School Graduate, Hotel Diploma/Degree
  
1. EXPERIENCE : Three years in similar capacity in Food and Beverage Department of a four or five star hotel
