Position: Chef Manager / Camp Boss Offshore

Reports to:  Company Offshore Operations Manager, Catering Manager.
Location: Offshore, Baku, Azerbaijan
Date:  16 April 2019

Purpose of the Job

Catering Company Chef Manager/Camp Boss will be responsible for the day-to-day delivery of the services to the required output specifications and levels of performance. The Chef Manager/Camp Boss will be visible around the client’s facility and actively promote the HSE, services and Facilities Management capabilities in liaison with the client’s infrastructure management. The Chef

Manager/Camp Boss will ensure team are well versed and adhere to local specific regulations policy that is specific to the location and the nature of the client’s operation.

Operational Excellence /Key Responsibilities

• Continuously update the Offshore Operations Manager on current activities which may effect the well running of any facilities under your responsibility.
• Management of FM budget and focus on cost control.
• Identify cost impacts and priorities works programs.
• Communicate and functionally report to the Head Office on a daily basis.
• Ensure that only authorized personnel use the facilities provided.
• Carry out regular informal visual checks of Company accommodation on the quality of housekeeping ensuring that standards are met.
• Interface with Offshore Installation Manager (OIM) on housekeeping problems and report any cabin or any other facilities maintenance requirement, this includes Accommodation and Recreational areas.
• Inform Office Administration or Management of any matters or any new items, which could have a cost impact to Company.
• Carry out the overview and co ordination of Catering functions at the request of the Head office. Interface with company management essential on all catering issues.
• To ensure that the POB report should be correct at all times and be available for the Offshore Installation Manager as well for any HO responsible person.
• Manage staffing rosters to ensure the recreation areas, gym, toilets and common showers are fully tide and cleaned.
• Ensure all equipment is kept in good working order and is kept in a clean and hygienic condition.
• Ensure that general cleanliness in the changing rooms, showers, toilet areas and meeting rooms meet western standards.
• Responsible for the safe and secure keeping of all premises within your area of control.
• Ensure first aid equipment is available.
• Maintain an up to date assets register of all equipment. 
• Manage all the activities of the bond as per company standards and procedures.
• Ensure that the bond and any storage areas are kept clean and comply with all health and safety regulations.
• The Chef Manager/Camp Boss shall carry out a brief pre-tour meeting (toolbox talk) with the crew at start of day and night shift.
• Ensure that seven days menus should be prepared a minimum of 3 days in advance.
• Ensures that all the Companies HSE procedures, rules, reports and documents are proper implemented and monitored.
• Carry out all the required documents and reports concerning stocks control (food daily consumption, inventories, deliveries, food orders, etc).
• Ensure that all the storage facilities are cleaned and proper organized following the company requirements.
• Ensure a proper physical stock segregation (distribution on the shelves, shelve life, FIFO, etc).
• Overseeing staff welfare, training and succession planning.
• Carry out the time sheet of the staff, report any problem with the staff such as bad behavior, absenteeism etc, to the Head Office.  
• Performance review meetings as and when required by client.
• Abide by Azerbaijan statutory health and safety and environmental regulations and corporate health and safety and environmental policy and apply safety management systems.

Qualifications Required

• Hold relevant qualification in either catering/hotel or managerial discipline.
• Financially/contractually astute.
• Good knowledge of English and Azeri languages (spoken and written).
• Strong interpersonal & organizational skills.
• At least five years’ successful experience in remote site catering services management.
• Must be Computer literate and have working knowledge of Microsoft Office Programs.
• Previous experience of working in offshore would be beneficial.
