CHEF DE PARTIE CUISINIER
Job Description
The Chef de Partie Cuisinier has to participate on the food preparation, following the Dalloyau recipes, quality and standards.
He/she should ensure the right finishing of the products is done according to Dalloyau recipes.
He/she communicates on the current Dalloyau products and the new creations.
He/she is under the responsibility of Dalloyau Baku Chef Executif and Chef de Cuisine.
He/she is responsible to operate his/her section regarding the production, hygiene and internal rules.
The Demi Chef de Partie Cuisinier, the Commis de Cuisine and the Stewards are under his/her responsibility and he/she makes sure that they finish their tasks properly.
He/she should be capable to operate his shift and his/her team when his superiors are absent, following their instructions
Main activities
Management
- Manage the his/her pastry team, motivate and stimulate them
- Train the new recruits according to Dalloyau culture, methods and standards
Production
- Organize the work of his/her section
- Use of Dalloyau methods and recipes
- Respect the quality of the products made
- Make sure the delays and schedules are respected
- Respect of the hygiene & security standards
- Guarantee the profitability of the productions, while ensuring the respect of the production process
- Ensure the link between his/her superiors and inferiors
- Be confidential and protect the recipes of the brand
- Ensure the information is well transmitted and the recipes are well adapted
- Implement the production process of the production of series (materials, organization, flows, …)
- Be flexible and ready to adapt on changes like rotation and/or menu and outside events
- Respect the use of the materials
- Control the daily arrived first ingredients from the suppliers, report any problems and insure the proper storage
- Respect the hierarchy
